Instructions
  1. Heat olive oil in a large skillet over medium-high heat until thoroughly heated.
  2. Pat each halibut filet dry with a paper towel. Then, season each with salt, pepper, and paprika.
  3. Place halibut fillets in the pan in a single layer, keeping room between each one. Allow to sear for 3-4 minutes on one side until golden brown. Then, flip to the other side and sear for another 2-3 minutes until the fish is opaque and cooked through. Remove fish from the pan; set aside and tent loosely with foil.
  4. Turn the pan to medium-low. Add butter to the pan and allow to melt. Then, add minced garlic. Cook for 30-60 seconds until fragrant. Slowly pour in the wine; stir. Simmer until the wine reduces by about 50%.
  5. Add halibut back to the pan and simmer for 1 minute, spooning the liquid over the fish to keep moist.
  6. Serve immediately with lemon wedges, if desired.
