Frozen Mussels

Ingredients
  

  • 2 lbs frozen mussels
  • 2 tbsp olive oil
  • 3 cloves garlic, minced
  • 1 cup white wine
  • 1 lemon, sliced
  • salt, to taste
  • pepper, to taste
  • chopped parsley, for garnish

Instructions
 

  • Thaw the Mussels: Place the frozen mussels in the refrigerator overnight or in a bowl of cold water for quicker thawing. Do not use hot or warm water or leave the frozen mussels on the counter. This will only encourage bacterial growth.
  • Prepare the Cooking Base: In a large pot or skillet, heat olive oil over medium heat. Add minced garlic and sauté until fragrant.
  • Cooking the Mussels: Increase the heat, pour in the white wine, and let it simmer for a minute. Add the thawed mussels to the pot along with lemon slices. Cover and cook for about 5-7 minutes or until the mussels open.
  • Season and Serve: Season with salt and pepper to taste. Discard any mussels that remain closed after cooking. Garnish with chopped parsley and serve the mussels with crusty bread to soak up the flavorful broth.
