A simple salad is one of the best quick lunches or refreshing dinners you can make if you’re focused on healthy living and clean dieting. Combine your favorite salad ingredients with fresh lobster from Maine and you’ll take your regular salads to a new, delightful level.

This refreshing and easy lobster salad recipe will take you no more than 10 minutes to make with cooked lobster from Maine Lobster House, but it’ll leave you feeling full and satisfied. Topped with an oil and lemon dressing, this salad has a tangy, light flavor that’s delicious but low in calories.

We suggest boiling or steaming our live lobster before preparing this recipe. Allow at least 15 minutes for the lobster to cool before breaking it down and removing the meat for the salad.

Instructions
  1. Mix together the olive oil and fresh lemon juice. Add a dash of salt and pepper; stir and set aside.
  2. Lay spinach leaves on a plate. Top with the avocado and tomato.
  3. Arrange the lobster meat over the salad mixture.
  4. Drizzle the oil and lemon juice dressing over the salad and lobster meat.
  5. Squeeze fresh juice from a lemon wedge over the salad and lobster, if desired. Enjoy!

The best part about this recipe is that it’s incredibly adaptable. You can add just about any of your favorite salad toppings to create your salad, swap baby spinach for romaine lettuce or mixed greens, or  combine the lobster meat with a small amount of mayonnaise and some diced celery for even more flavor and the right amount of crunch. You can also swap the oil and lemon dressing for a vinaigrette or a light Italian dressing with a bolder flavor.  

Fun tip: This recipe also transforms beautifully into a sandwich on whole wheat bread or a wrap! Slice the avocado and tomato thinly instead of dicing them and layer them onto your sandwich or wrap with the spinach and lobster. Drizzle the lemon and oil mixture over the lobster meat, or swap it for a light spread of mayo.
