Cold Water Lobster Tails

Perfect to keep in your freezer for an upcoming special occasion, these jumbo lobster tails boast unparalleled freshness and flavor, with the convenience of delivery right to your door.

Chicago Steak Company Filet Mignons

The butcher's choice filet mignons are exactly that, the Butcher's choice steaks! These specially reserved steaks are the very steaks that butchers would take home to enjoy with their families. Each steak is hand-selected and hand carved to ensure you get the best cut possible, and then wet-aged for a minimum of 28 days to intensify its naturally delicious flavor. That is why our filet mignons are among the most flavorful, juicy, and tender filet mignons you'll ever eat. These exquisite steaks are sure to satisfy!


Cooking Frozen Maine Lobster Tails


  • 2 lobster tails
  • 2 tablespoons unsalted butter, melted
  • 1/2 teaspoon paprika
  • Salt and pepper, to taste
  • Lemon wedges, for serving


  1. Thaw the lobster tails if they are frozen by placing them in the refrigerator overnight.
  2. Preheat the oven to 400°F (200°C).
  3. Use kitchen shears to cut through the top of the shell down to the tail, but do not cut through the tail.
  4. Use your fingers to gently pry the shell open and loosen the meat from the shell, but leave it attached at the base of the tail.
  5. Lift the meat and place it on top of the shell, so it's exposed.
  6. Brush the lobster meat with melted butter and sprinkle with paprika, salt, and pepper.
  7. Place the lobster tails on a baking sheet and bake for 10-12 minutes, or until the meat is opaque and the shell is bright red.
  8. Serve the lobster tails with lemon wedges on the side.

Note: You can also cook lobster tails on the grill, by placing them meat-side down and grilling for about 5-6 minutes per side, or until the meat is opaque and slightly charred. Be sure to keep an eye on the lobster tails while cooking, as they can easily overcook and become tough.

Lobster is one of those flavors you don't want to mask with a bunch of sauce and seasonings. Usually, all it needs to brighten its natural flavors is some butter or a light wine sauce, as anything else might overwhelm its decadent, yet delicate, flavors.The best pairing for lobster and wine would be Pinot Grigio or Sauvignon Blanc, both of which blend well to non-complex seafood dishes with subtle flavors. They don't overpower the natural taste of lobster, but instead help to brighten it up with their fruity tastes.
